The Non-Linear Kitchen: Why Recipes Aren't Pure Math

Fundamental culinary physics every home cook and baker should know when adjusting batches.

01

Leaveners Don't Scale 1:1

Baking powder, baking soda, and yeast generate carbon dioxide gas. In a tripled batch of cake batter, gas bubbles encounter greater hydrostatic depth and surface tension. Multiplying leaveners by 3× often causes cake structures to over-expand and collapse in the oven center. Use ~10–20% less leavening beyond 2×.

02

The Spice & Salt Trap

Capsaicin (hot peppers), cloves, nutmeg, and black pepper intensify dramatically with volume because aromatic volatile oils do not evaporate linearly during simmering. When tripling a stew, scale pungent spices to only 1.75×–2×, then taste and adjust near the end of cooking.

03

Pan Surface vs. Batter Depth

Cakes rise and bake through conduction from the pan edges and evaporation from the top. When doubling a cake into a larger pan, if the batter is shallower, it will bake 15–20% faster and risk drying out; if the batter is deeper, the outside will burn before the center bakes through.

Frequently Asked Questions

Practical answers for common kitchen scaling hurdles.

How do I measure half an egg or 1.5 eggs?+

Crack 1 large egg (which weighs about 50 grams without shell: ~30g white, ~20g yolk) into a small bowl, whisk thoroughly with a fork until yolk and white are completely emulsified, then measure out 25 grams (or 2 tablespoons) for the half-egg portion.

Why does a cup of flour weigh 120g instead of 240g?+

A US cup is a measure of liquid volume (approx. 236.6 ml). Water weighs 236.6 grams per cup because water has a density of 1 g/ml. Flour is full of air pockets and has a much lower bulk density (~0.5 g/ml), so 1 cup of spooned-and-leveled all-purpose flour weighs approximately 120 grams.

Why didn't my cooking time double when I doubled my stew?+

Cooking time depends on heat transfer through meat dimensions and pan surface evaporation. Two pounds of 1-inch beef cubes have the exact same individual thickness as one pound of 1-inch cubes. Once the Dutch oven returns to a simmer, the cooking time is nearly the same (perhaps just 5–10 minutes longer to heat the extra liquid volume).

How does CookMath handle privacy?+

CookMath runs 100% locally in your browser. All string parsing, fractions, density lookups, and pan area calculations execute client-side. We do not store your recipes, send input to any cloud AI, or require an account.

What is the difference between US Customary and Metric cups?+

A US Customary cup is 236.588 ml. A Metric cup (standard in Australia, New Zealand, and commonly used in Canada and the UK) is exactly 250 ml. If you use a Metric cup with US recipes without accounting for the ~5.6% difference, your flour or liquid balance can be thrown off.
